It is difficult to pin down the menu at Canyon. Although they describe themselves as "Southwest Fusion," including influences from Asia and Central/South America, there are also such dishes as mac and cheese featured. The menu changes so often - including nightly specials - that you can always be surprised by what is available.
The ambiance and service are both highly rated by diners, as is the signature prickly pear margarita. They do not take reservations, so, depending on what time you arrive, your wait may be up to an hour or even longer.
