Culturally and geographically speaking, Austin's more than a little ways from the Louisiana bayous, but that doesn't mean you can't track down top-of-the-line Cajun cuisine in the city. The French Quarter Grille, for instance, gets its swamp cred from executive chef Dave Gore, a Lubbock native who nonetheless learned the ins-and-outs of Cajun cookery through years working at the beloved Austin restaurant Gumbo's and apprenticing under its Baton Rouge-born chef/owner.
Gumbos, po' boys, étouffée--turns out Louisiana specialties, put together with skill and respect as Gore does, taste mighty good out here in Central Texas.
