Chef Joaquín Schmidt Río-Valle fashions all his dishes using only the ingredients that meet his standards of excellence including the best balsamic vinegars and special salts imported from Brittany. The menu changes often, and in fact, you will not be presented with one. Rather, choose a number of courses and Schmidt will go to work to create a unique and personalized meal. He often approaches guests at their table to talk about the dining experience. The attention to detail and thoughtful service are well worth the price.
