Perched atop the palatial Casino del Madrid, La Terraza del Casino offers spectacular views of the city’s old rooftops and churches during balmy summers. The mirrors, chandeliers, and pops of pastel color in the main dining room create an environment of enormous charm. Enjoy cocktails infused with liquid nitrogen—made tableside—followed by a series of gastro snacks and tapiplatos. Chef Paco Roncero chooses a restrained, simpler approach to avante-garde cuisine compared to his mentor Ferran Adrià, who regularly visits the restaurant. You might sample delectables such as bundled squid with sweet-salty onion confit and mushrooms in a drawing of ink; tender Wagyu beef with a light teriyaki glaze and citrus lime foam; and miso-marinated salmon with cucumber, pineapple, and fennel salad. Creativity and presentation are of the utmost importance here—and they've done well, earning the restaurant two Michelin stars.
