El Claustro is located in the five-star AC Hotel Palacio Santa Paula. The building dates back to 1563 and still retains the Renaissance-style ceilings, pillars, and original paintings that used to be part of the Santa Paula convent. Executive Chef Juan Andrés Morilla, dubbed Spain's Champion Chef in 2009, has crafted a modern menu that showcases traditional Andalusian dishes elevated to haute cuisine. Specialties include sturgeon garnished with cuttlefish and sunchoke purée, crispy roast pigeon complemented with a slice of paté, and a decadent piece of fried suckling pig on a bed of potatoes and peppers.
