Every detail of their tasting menu has been meticulously planned and prepared. It begins with appetizers paired with challenging cocktails in the Dark Room, a low-light area where diners are encouraged to concentrate their senses on taste and conversation. Guests are then transitioned to the Light Room, a more formal dining area where the meal continues with carefully selected wines. The service is reported to be superb and the food, from the creative mind of Chef Luke Dale-Roberts, is award-winning. Since seatings are limited to 40 - yes, forty - guests per evening, it is imperative to make reservations well in advance. As in, months in advance. From all reports, however, the wait is well worth it.
