At Central, Chef Virgilio Martinez takes an ecological and anthropological approach to cuisine. The creative menu here is like a tastebud tour of Peruvian ecosystems: offshore depths, desert plateaus, high Andean basins, steamy rainforest. Native ingredients from across this spectrum--seaweed and scallops, potatoes and chili peppers, cactus and tropical fruit--star in the dishes, accentuated by produce, herbs, and spices gathered from the Central garden. Martinez's vision has garnered plenty of international attention: His Miraflores restaurant has been ranked among the finest in the world.
