Named for its Paris-trained chefs, Gastón Acurio and Astrid Gutsche, Astrid y Gastón began as essentially a French eatery, but over the ensuing decades it's evolved into a celebration of Peruvian cuisine, ingredients, and heritage. Because the cookery of Peru reflects the influences of many different cultures--it's a long-standing fusion cuisine--you'll find shimmers of European, Japanese, African, and other international culinary influences strung through the regularly shifting menu. Besides the food, Astrid y Gastón has a luxuriously long wine list spanning the globe as well as a fine cocktail menu (the bar's a great place to sample the kitchen's concoctions alongside a libation).
