The state fair of Leon - well, Guanajuato - is the time to visit and enjoy the city and state. Held every late January, the 30-acre fairground is filled with more than a thousand exhibitors, including livestock (of course), exhilarating rides, food, rodeos, Lucha Libre wrestling (a must-see), bullfighting and evening fireworks displays. It is the sort of fun that will make you feel like a kid all over again. The fair marks the founding of Leon more than 400 years ago, and the celebration is still going strong. Be sure to attend the coronation of the Queen of the fair. You'd be remiss to leave the grounds without trying the signature dish: the "sandal" contains steak seasoned with green or red salsa, topped with cilantro, minced onion, grated cheese and cream.
