The name of Boscaini is recognized throughout Lugagnano for their excellence not only in the Italian culinary tradition, but in sustainable agriculture and ranching. Their latest venture is Ai Salvi, named in honor of their original family tavern. Open since 2002, Ai Salvi serves only high-quality organic ingredients. Most of their own produce is served on the menu. Try the rabbit “bon bon” served with orange-mango chutney and apple mustard, and the oven-baked pancake of radicchio, Roquefort, Lardo di Colonnata, and honey. Ai Salvi is most well-known for their brilliant steak recipes, like the Chateaubriand or Fiorentina. If you still have room, eat one of their unusual desserts, like the iced fruit cheesecake soaked in mulled wine or the chocolate cake with a soft “heart” of ice cream and cardamom.
