The oldest gelato shop in Rome, Giolitti offers an array of flavors including champagne and marsala custard—in addition to all the classics (don't worry, fragola fans). And while the interior has been updated a bit since 1900 (which is probably a good thing), it maintains its cozy ambiance, but with a modern, and usually-pretty-bustling, twist.
Since it's right near the Pantheon (as well as a host of other awesome stuff), you'll have no trouble mustering an excuse to swing in and grab a cup. Actually, you could probably get away with dropping by more than once—all in the name of research, of course.
