Les Viviers offers mostly French cuisine, though the menu is influenced by a number of International styles. A great place for a romantic dinner or a classy mid-day lunch, Les Viviers can cater to varied crowds. While there are a number of nice dishes such as the seasonal asparagus risotto, the main special is most definitely the bouillabaisse, crafted as authentically as possible. This dish is a fish stew that originated in France, and Les Viviers creates a version as delicious as any other. With a large menu of fish and well-balanced provencal spices, meals can be pricey, but not in comparison to many other restaurants in Nice.
