Mr. Red Cafe has a portion of the menu dedicated to everyone's favorite Vietnamese noodle soup (pho). However, the focus here is on ingredients and style that feature northern cuisine, as opposed to more popular southern Vietnamese fare.
The differences are subtle, and become more obvious when you experience them firsthand. The variety of rice is sweeter and more glutinous, the broths are clearer, and flavours are less subtle. The menu and presentation is meant to be comparable to what you would find in a bustling Hanoi market. Distinctly different, and still authentic.
